January Favorites

Currently a balmy 0° here in the Twin Cities. It was -16 this morning when I walked to class! Wearing 2 shirts, a sweatshirt, a Northface, and a down coat is not natural. It has been so cold (classes cancelled twice this month due to cold temps!). Other schools around the state have been closed for 5 or 6 days this month as well. I’ve never even heard of this happening! What even is the Polar Vortex anyway? All I know is it’s turned me into a sloth.

Here are the things that I have been hooked on during the month of January.

Celestial Seasonings Peppermint Herb Tea

I’m addicted and have been drinking two cups a day. Starbucks Refreshmint Tea is really good as well. There are tons of articles on the health benefits of peppermint tea, but here’s a good one.

Peanut Butter & Banana Oatmeal

I eat oatmeal for breakfast almost every single day. My latest flavor combo:

1/2 c. old fashioned oats, 1/2 c. water, 1/4 c. soy milk — microwave for 3 minutes. Mix in a tablespoon of peanut butter and 1 chopped banana. Add a splash more soy milk and mix it up. It may look gross but it’s finna delish.

Ed Hardy Coffret Perfume

I’m loyal when it comes to perfumes. The Ed Hardy brand kinda scares me with it’s strange designs but I’ve been using this since my senior year of high school. I just recently finished my first bottle (lasted almost 4 years… is that bad?) and bought a new one. The link I added is from Ulta but I found mine in a set at Target for $20 (nice).

NYC Lip Stain in Smooch Proof

This definitely doesn’t last 16 hours like it says, but it’s fast & cheap and looks good for at least a few hours. I hate lipstick and lip gloss so this is a low maintenance alternative.

CVS Advanced Healing Ointment/Aquaphor

This record breaking cold Minnesota winter has got the best of my skin and thanks to my sister this is the only thing that has kept my lips and hands from becoming desert wastelands.

TV shows: Barefoot Contessa & Cupcake Wars

Free trial of Amazon Prime is a lifesaver. These two shows kept me alive while I was on my death bed due to all the complications with my wisdom teeth extraction. If you’re a fan of Ina Garten (and Jeffery), follow @DrunkInaGarten on Twitter for some laughs.  Cupcake Wars is also a guilty pleasure.

Book I Finished: The Longest Ride – Nicholas Sparks

Gotta love Nicholas Sparks. I’ve read every single one of his books so naturally I had to read the latest one. It was a bit predictable which isn’t typical for his books but still an entertaining read.

Can’t wait to see what February brings.

New Blog & Sweet Potato Bites

WordPress seems to be the way to go these days in the world of free blogging. I used to have a blogspot but it was getting awk. (My computer keeps trying to autocorret blogspot into “bloodspot”… also awk).

What I Know is the name of my favorite Parachute song. I thought it was fitting since a blog is exactly that — what I know. Listen and love Parachute because they’re hilarious and great.

In other news, I’ve been really into sweet potatoes lately. These sweet potato bites are easy and delish. I just chop up a giant sweet potato in bite-size pieces and put them into a big bowl. Then pour over about 1/4 c. olive oil, seasoned salt, and black pepper. I don’t really measure, just sort of eyeball it. Stir them so they all get evenly covered and then spread them out on a baking sheet. Bake for 20-25 minutes at 450 degrees. YUM. Here’s my latest Insta pic:
